Tilapia
Well I wound up pan frying my tilapia instead of baking it and the funny thing was I ended up blotting the excess fat from the surface before I ate it. I just used a little butter (probably 2 teaspoons of butter) for the 2 pieces of fish that I cooked at the same time. I love to quickly brown each side, then stick a lid on top of my pan so that the fish steam-cooks. (I love cooking eggs the same way) Anyway the fish was yummy, albeit a little greasy. I really need to put in a little more effort and try cooking it in parchment paper. I cooked an extra piece in the pan (after the first two were out) without adding any more butter. Then I split that piece into two leftover containers for tomorrow.
